Since we got got Guppy last week, our nights have been a little hectic. Trying to find our new groove has been challenging, but so, so fun!

All I have to say is PTL for my crockpot! It has truly come in handy the past week or so! I wanted to do a quick post to let y’all know what I’ve been cooking up in my crockpot – and ask for some of your favorite crockpot recipes!!

To help with my personal organization, I keep all of my recipes on Pinterest. I have a few food boards – the two that pertain to dinner are Num Num Num and Delicious Successes. Num Num Num focuses on dinner recipes and Delicious Successes is a catch all for all of the recipes I have tried and liked!

This post will focus on three crockpot recipes I have made in the past few days. (Note: I completely forgot to take pics of the meals after I made them, so the follow pics are from the blogs that these recipes came from.)

#1: Beef & Broccoli

Wow, this recipe was DELICIOUS!! It was my first time making it, so I was a little nervous, but it ended up being a huge crowd favorite! I made it one night when Oakley and I had Sara and Garrett over for dinner. It was the perfect amount of food for 4. I served it with jasmine rice – yum yum yum! In Oakley’s words, “this is a keeper.”

#2: Pork Carnitas

I’ve made this recipe a time or two and I always find myself coming back to it when I get tired of cooking chicken and beef in the crockpot. It takes a little bit of time to prepare everything before it goes in the crockpot, so be sure to plan accordingly if you plan on using this recipe. However, it is totally worth the prep time!!! I’ve served this as tacos and as a “burrito bowl”. Both are great! I almost always pair it with a Mexican rice (my favorite is Goya’s). Don’t forget the toppings!

With this recipe, we always have leftovers. Oakley has taken it for lunch twice since we had it for dinner!

#3: Chicken Tacos

What a winner! There are so many things I love about this recipe. It’s inexpensive, super quick, and soooo yummy!!! We’re talking three ingredients total – chicken breasts, taco seasoning, and salsa. Yep, it doesn’t get much easier than that! Last week, I doubled the recipe and brought it over to Megan and Casey’s since they’re new parents! It’s so easy to make, but it’s also great as a leftover! As with the carnitas, you can serve this as either tacos or taco salad. I usually opt for the taco salad, but it’s great in tacos too!
